Raw Dinner and Dessert – April 8th

Tacos and Key Lime Pie!In this class we’ll learn how to make a delicious raw dinner and dessert.  We’ll enjoy the meal in class and you’ll take the recipes home with you!

These are two of my favorite raw dishes!  Tacos are served on a large leaf with walnut-meat and fresh made salsa and topped with avocado, red pepper and grated carrot.  And this lime pie is amazing!  A date-nut crust and a date-lime base with a rich coconut cream topping!  This class will also be a celebration of my 30th birthday!

Nut Milk, Pâté and Flax Crackers – March 19th

In this class we’ll learn how to make nut and seed milks, pâtés, and simple flax crackers.  You’ll take the recipes with you along with ideas on various ways to enjoy these staple foods.

Intro to Raw and Living Foods Class – March 12th

Interested in adding more fresh, vibrant foods to your diet in a fun and delicious way? Join us and experience a fun introduction to yummy raw and living foods!

When: Saturday, March 12th – 1:00pm to 4:00pm

Where: Buddhist Temple – 927 South Perry

You Will Learn To:

  • Make fun and simple recipes with raw foods
  • Easily grow your own sprouts
  • Make your own sauces, dips and salad dressings
  • Blend your own nut and seed milks
  • Create delicious raw desserts free of dairy, gluten or processed sugars

You Will Take With You:

  • A full belly from tasting all the yummy and nutritious raw & living foods
  • A bunch of new recipes instructing you how to make the foods you just ate
  • Knowledge and confidence on how to incorporate raw and living foods into your diet

Are you interested in private, one on one raw foods instruction?

I plan to offer group classes in the spring, but for now I am offering private, one on one classes with anyone who is interested.  These classes will vary based on the individuals desires.  This may involve creating a meal plan for you based on your likes and your personal goals.  These one on one classes may also involve me coming into your home to teach within the space you will be creating in.

Raw Chocolate Mousse!

I know it might sound crazy, avocados in chocolate mousse, but try, it is decadent and delicious!

 

3 avocados

½ C raw cacao powder

¾  C dates/agave/honey

¼ C coconut oil (optional)

1 tsp vanilla extract

¼ tsp sea salt or crystal salt

 

If using agave or honey, combine all ingredients, except cacao powder, in a food processor or high-speed blender and blend until smooth, adding a small amount of water if needed.  Once smooth, add cacao powder and blend.  If using dates, soak dates in just enough water to cover for about a ½ hour.   Place dates and the soak water in a food processor or high-speed blender and blend until smooth.  Add remaining ingredients, except cacao powder, and blend until smooth.  Add cacao powder and blend.  Eat right away or chill for later.

I like the flavor and richness the coconut oil adds, but this mousse is still delicious without it and it can be omitted for a lower fat mousse.

Note:  If using honey or agave, start with ½ C and add more if necessary for desired sweetness.
